These Costa Rican honey processed beans are a thrill and a real treat. They hail from the Brunca region which is known for its fine Arabica coffee cultivated on small, hillside fincas (farms).
Hold tight because like a rollercoaster your morning is about to climb sky-high as a bouquet of floral aromas fill the room. Then at first sip your taste buds are in for a wild ride. Expect a medium brightness with a balanced body and notes of peach, caramel, raisin and honey.

The process for honey beans falls between the washed and natural/dry methods of processing beans and is not particularly common outside of Central America. For honey beans, the cherry peel is removed but some of the sticky mucilage beneath the coffee cherry's skin remains while the beans dry. The mucilage is both sticky and very sweet, much like honey.
